My hands and feet used to fall asleep while I was walking or working out. I only get this occasionally now. I think prior to going on this diet for lack of a better word I had an ongoing headache for over 2 years. I still get headaches from time to time but not like it used to be.
I am always trying to come up with new recipes. I guess this is similar to Hawaiian chicken. There are so many things I can not eat. There are very few restaurants that I can eat out. We have a couple of Hawaiian restaurants locally. The food is really good. But I know there is lots of refined sugar in it and other things I can’t have. I am sure there are other items in the food that I can’t have. Therefore I wanted to create a recipe similar to Hawaiian BBQ Chicken
It is hard to put nutritional facts for this recipe as the majority of the marinade is discarded. You can also just make the marinade and store in your fridge for up to one month and use as needed.
Make with Bacon Bok Choy
Sweet and Salty BBQ Chicken and Marinade
Ingredients:
1 cup fresh or canned pineapple juice
1/2 cup maple sugar
3/4 cup coconut aminos garlic sauce
1 teaspoon salt
Directions:
Combine the ingredients. Reserve 1/2 cup of marinade and place in a container with a lid and place in the fridge. Pour remaining marinade over chicken. Let marinate overnight. Remove chicken from the fridge and allow to come to room temperature. Place chicken on a beer or soda can. Place the can in the rear of the chicken and stand chicken up. Place on BBQ and cook on high. Take reserved marinade and pour approximately 1/8 cup over the chicken. After 30 minutes pour another 1/8 of a cup over the chicken making sure some get into the center of the chicken. Use the remaining marinade in other dishes or with Bacon Bok Choy. BBQ an 1 to an 1 1/4 hour. It will be dark in color but it’s not burnt it is the sugar that has darkened the skin.
