Oven Roasted Winter Vegetables are my favorite go-to side dish during the winter. In fact, this dish is not only visually appealing but it is absolutely delicious and nutritious. The aroma and the flavors are beyond heavenly. As a matter of fact, this vegetable side dish will have you looking forward to fall and winter.
Oven Roasted Winter Vegetables
Roasted radishes are a must for this dish. When roasted, radishes mellow and have a creamy mild flavor. In all honesty, this recipe is a very flexible recipe as you can mix the recipe up add more vegetables or subtract some. Other options are any kind of potatoes, squash, celery, sweet potatoes, onions, and purple onions. Not to mention that simply by changing or adding a vegetable also changes the flavor or this dish.
Fresh herbs can also be added such as sage, bay leaf, parsley, rosemary, or basil each will add a different flavor. Try using Savory Chicken Spice Rub or Prime Rib Spice Rub and see how the spice blend changes the flavor.
My diet has changed in the hopes of creating a more healthy me. Prior to changing the way I eat my health was deteriorating. I have several autoimmune illnesses including Hashimoto’s thyroid disease. However, since switching the way I eat I am starting to feel much better. I no longer eat grains or refined sugar and limit my dairy. By doing so I have improved my health.
I know many kids don’t like vegetables. But mine have always loved them. I will admit I used to think they were going to be vegetarians. This is probably my favorite dish to make in cold weather. Oven Roasted Winter Vegetables
Ingredients:
- 1 cup radishes
- 1 cup turnips
- 1 cup rutabagas
- 1 cup parsnips
- 1 cup beets
- 1/2 cup celery root
- 1 cup carrots
- 1/4 cup leeks
- 1 tbsp avocado oil
Directions:
First, preheat oven and oil a baking sheet or baking stone. Secondly, use your favorite spice mix: BBQ, Asian, or Steak seasonings. It’s a very flexible recipe as you can mix the recipe up add more vegetables or subtract some. Other options are any kind of potatoes, squash, celery, sweet potatoes. Chop up your vegetables.
Once vegetables are cut up and place into a gallon sealable plastic bag. Finally, add avocado oil and seasonings to the bag. Next, seal the bag and shake up until seasonings are on all the vegetables. Lastly, pour the vegetables onto your oil baking sheet or baking stone. Serves 6 Bake at 400 for 45 mins.
