Swedish Pepperkakor Waffles

This has a delicate flavor of cinnamon.  Pepperkakor is Sweden's version of gingerbread.

Ingredients

  • 2 egg whites
  • 2 egg yolks
  • 3/4 cup coconut buttermilk
  • 1/8 cup apple cider
  • 2 tbsp melted coconut oil
  • 2 tbsp coconut nectar
  • 1/2 cup cassava flour
  • 1/2 cup almond flour
  • 1 1/2 tsps baking soda
  • 2 tsps ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground clove

Instructions

  • Preheat waffle iron. 
  • Separate your eggs into separate bowls. 
  • Beat egg whites until stiff peaks and set aside. 
  • In a separate bowl mix together eggs, coconut buttermilk, and melted coconut oil until combined. 
  • Add coconut nectar and apple cider to the egg mixture and mix until blended. Set aside the egg mixture.
  • In a separate bowl combine cassava flour, almond flour, baking powder, cinnamon, ginger, and clove until thoroughly blended. 
  • Add 1/2 the flour mixture to the egg mixture and blend until combined. 
  • Add in the remaining flour mixture into the egg mixture until completely incorporated. 
  • Lastly, fold in the egg whites into the egg mixture. Fold from the bottom up. Continue to fold in the egg whites until they are incorporated. 
  • Add a small amount of oil to the waffle maker. Add about 1/4 cup of batter and cook your waffles one at a time until cooked through and crispy. Approximately 1-2 minutes cook time.
