Sweet Grapefruit Curd Syrup

Sweet Grapefruit Curd Syrup for pancakes, waffles, crepes, etc. A sweet and tart topping made with freshly squeezed grapefruit juice and grapefruit zest.

  • 1 whole egg
  • 1 tbsp Yacon Syrup
  • 4 tbsp grapefruit juice
  • 1 pinch of salt


  • First, beat the egg in a bowl and set aside. Juice the grapefruit.
  • Next mix together the grapefruit juice, Yacon syrup, and grapefruit zest. 
  • Additionally,  the beaten egg into the grapefruit juice concoction while whisking the whole time.
  • Pour the mixture into a double boiler. Cook over medium heat in the double boiler continuously stirring the mixture the whole time. 
  • Cook for a few minutes until it becomes a thin syrup consistency. Or if you prefer to cook a few minutes more which will create a thicker consistency. 
  • Remove from heat and add in pinch of salt.

Use as a syrup over pancakes, waffles or crepes. If not using pour remaining syrup into a sterilized jar with a tight-fitting lid and store in the fridge for up to three weeks.
