Almond Fig No-Bake Cookies

Fig Almond No-Bake Cookies are a sweet and crunchy bite. Made with almond flour, figs and cacao nibs for texture and crunch. Quick and easy to make.

Ingredients

  • 10 dried figs
  • 1 cup boiling water
  • 1 cup almond flour
  • 3 tbsp cacao nibs

Instructions

  • Being by soaking the dried figs in the boiling water for 15 -30 minutes. 
  • After 15 or 30 minutes drain the water from the figs. 
  • Remove the top nubby stem from the figs. 
  • Place almond flour, soaked figs, and cacoa nibs into a food processor. 
  • Process until thoroughly combined. 
  • Next, scoop out and roll into balls. Serve or place in an airtight container in the fridge.
