Ingredients

  • 1 cup chopped rhubarb
  • 1 cup water
  • 3/4 cup monkfruit sweetener

Instructions

  • First, preheat the oven to 325 F.
  • Place chopped rhubarb inside a deep casserole dish, pour in the water, and monkfuit sweetener.
  • Bake for approximately 20 minutes.
  • Carefully remove from the oven so as not to get burned by the liquid.
  • Allow it to cool slightly.
  • Lastly, strain off the syrup and use it for pancakes, waffles, ice cream, or yogurt.

Notes:

  • Use the cooked rhubarb in any cake or other recipe or discard.
  • The rhubarb will be lightly sweet
