First, preheat the oven to 325 F.
Second, cream together butter and monkfruit sweetener until thoroughly.

Next, in a separate bowl combine stir together the vanilla monkfruit sweetener, cassava flour, and ammonium carbonate.
1/2 tsp vanilla powdered monkfruit sweetener or vanilla extract, 1 1/2 cup cassava flour, 1 tsp Ammonium Carbonate
Finally, add flour a little at a time while blending with the sugar.
Remove a small amount of dough and roll into a ball or use the smallest cookie scoop.
Place small balls onto a greased cookie sheet.
Lastly, place the cookies into the oven and bake for 14 - 17 minutes.
Remove and allow to cool slightly.
Makes roughly 50 cookies
Store in an air tight container.
