Ingredients

  • 1 cup softened butter
  • 3/4 cup monkfruit sweetener
  • 1/2 tsp vanilla powdered monkfruit sweetener or vanilla extract see the recipe on my blog
  • 1 1/2 cup cassava flour
  • 1 tsp Ammonium Carbonate

Instructions

  • First, preheat the oven to 325 F.
  • Second, cream together butter and monkfruit sweetener until thoroughly.
    1 cup softened butter, 3/4 cup monkfruit sweetener
  • Next, in a separate bowl combine stir together the vanilla monkfruit sweetener, cassava flour, and ammonium carbonate.
    1/2 tsp vanilla powdered monkfruit sweetener or vanilla extract, 1 1/2 cup cassava flour, 1 tsp Ammonium Carbonate
  • Finally, add flour a little at a time while blending with the sugar.
  • Remove a small amount of dough and roll into a ball or use the smallest cookie scoop.
  • Place small balls onto a greased cookie sheet.
  • Lastly, place the cookies into the oven and bake for 14 - 17 minutes.
  • Remove and allow to cool slightly.
  • Makes roughly 50 cookies
  • Store in an air tight container.
