Ingredients

  • 2 lbs. chicken breast
  • 3 tbsp Taco Seasoning See the recipe on my blog
  • 1/2 tsp salt
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 2 whole minced garlic cloves
  • 1/2 cup shredded cheese of your choice
  • 2 tsp avocado or olive oil
  • 24 large gluten-free tortilla or gluten-free corn tortillas
  • 2 cups shredded or sliced lettuce
  • 1/3 cup sliced tomatoes
  • *1/8 cup cilantro leaves optional ingredient

Instructions

  • First, add oil and place the chicken fryer pan on medium heat. Second dice chicken into small bite-size pieces.
    2 tsp avocado or olive oil
  • Second dice chicken into small bite-size pieces.  
    2 lbs. chicken breast
  • Once the pan is hot add onions, bell peppers, chicken, and garlic.
    1 cup chopped onions, 1 cup chopped bell peppers, 2 whole minced garlic cloves
  • Let cook for a few minutes.
  • Next, add the taco seasoning and salt.
    3 tbsp Taco Seasoning, 1/2 tsp salt
  • Once the chicken is cooked from the heat.  
  • Finally, add a small amount of oil and add a tortilla to the pan.
    24 large gluten-free tortilla or gluten-free corn tortillas
  • Once the bottom is heated through flip the tortilla over with a spatula.
  • Add a small amount of shredded cheese and about 2 tablespoons of the cooked chicken mixture.
    1/2 cup shredded cheese of your choice
  • Lastly, fold the tortilla in half and place it on a plate.
  • Continue with another tortilla and cheese until all the meat is gone.
  • Makes approximately 24 tacos depending on the amount of meat placed inside each tortilla.
  • Allow each person to add lettuce and tomato to each taco.
