Ingredients

  • 6 cups shredded potatoes or hash browns
  • 1 lb. chicken maple sausage
  • 6 whole eggs
  • 1 tsp pink salt
  • 1/2 tsp black pepper
  • 4 tbsp Black Cherry BBQ Sauce see the recipe on my blog
  • 2 cups milk
  • 1/2 cup sour cream
  • 2 whole baby bell peppers about two tablespoons
  • 1 whole green onion both white and green parts
  • 4 oz. cheese of choice

Instructions

  • First, preheat your outdoor smoker grill or other grills.
  • Once the grill is hot cook sausage up in a skillet.
    1 lb. chicken maple sausage
  • Next, remove sausages and cut into bite-size piece.
  • Return the cut sausages to the skillet over the grill.
  • Add maple syrup and cook one minute, stirring to coat the sausage.

  • Next, spray a 13x9x2 inch dish with cooking spray (do this away from the grill).
  • Finally, place the shredded potatoes or hashbrowns in the bottom of a casserole dish and top with maple sausage.
    6 cups shredded potatoes or hash browns
  • Next, mix eggs milk, bbq sauce, salt, pepper, and sour cream and blend well together.
    6 whole eggs, 1 tsp pink salt, 1/2 tsp black pepper, 2 cups milk, 1/2 cup sour cream, 4 tbsp Black Cherry BBQ Sauce
  • Pour the milk mixture over the potatoes.
  • Lastly, top with green onions and bell peppers.
    2 whole baby bell peppers, 1 whole green onion both white and green parts, 4 oz. cheese of choice
  • Place onto the grill over a piece of tin foil.
  • Cook on high for 30 - 45 minutes.
  • Place cheese on top of the casserole during the last minute or two of cooking.

Best Pellets or Wood to Use

  • Depending on the type of grill and how hot it is. Use hickory, applewood, pecan, or mesquite pellets for the best flavor

Oven Baked Directions:

  • First, preheat the oven to 400 F. 
  • Second, cook sausage over medium heat until cooked through.
  • Next, remove sausages and cut into bite-size piece.

  • Place cooked and cut sausages back onto the stove.
  • Add maple syrup and cook one minute, stirring to coat the sausage.

  • Next, spray a 13x9x2 inch dish with cooking spray.
  • Finally, place the shredded potatoes in the bottom of a casserole dish and top with maple sausage.

  • Cook at 350 for 30-35 minutes.
  • Place cheese on top of the casserole during the last minute or two of cooking.
