First, preheat the oven to 350.
Second, in a standing mixer whip cream cheese on slow.
12 oz. cream cheese
Next, add sour cream and mix on low until the cream cheese is smooth.
1/2 cup sour cream
Finally, add homemade Sweetened Condensed coconut milk, vanilla, maple sugar, cinnamon, cardamon, and nutmeg.
3/4 cup can of coconut milk or heavy cream, 2 tsp vanilla, 1 recipe Homemade Sweetened Condensed coconut milk, 1 tsp cinnamon, 1/8 tsp nutmeg, 1/4 tsp cardamom, 1/2 cup maple sugar Blend until smooth.
Next, add eggs one at a time.

Fold in cooled apple mixture into the cream cheese mixture.
Finally, pour the cheesecake mixture into a cheesecake crust inside a springform pan.
Place springform into a baking pan with sides (a brownie pan or a pan that is at least 2 inches deep.)
Next, carefully pour 3 cups of boiling water into a brownie pan.
Place brownie pan on the bottom rack.
Lastly, place the springform pan with cheesecake on the middle rack take out the top rack if you need to.
Close the door and cook for 15 minutes at 350.
After 15 minutes, reduce heat to 200 and cook for 1 hour 10 minutes.
Set your timer.
Do not open the oven door.
The water bath reduces the chance of your cheesecake cracking.
When your timer goes off remove the cheesecake and allow it to cool.
Once cool place in the refrigerator for a minimum of 4 hours.
Do not place the warm cheesecake into the refrigerator as it will make the cheesecake weep.
