Gluten-Free Bacon-n-Cheddar Bread

Gluten-Free Bacon-n-Cheddar Bread Recipe made with no nitrate bacon, carmalized onions, and cheddar cheese. Makes a great sandwich bread.

Ingredients

  • 1 1/2 cup shredded cheddar cheese
  • 4 slices fried bacon (no nitrates etc.)
  • 1/2 cup chopped fried onions
  • 2 cups cassava flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp pink salt
  • 1/2 cup coconut oil or butter
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 cup coconut milk or whipped cream

Instructions

  • First, preheat oven to 350 F.
  • Second, shred cheese and fry up the onions and bacon.
    4 slices fried bacon (no nitrates etc.), 1/2 cup chopped fried onions
  • Next, combine cassava flour, baking powder, baking soda, salt, pepper, and onion powder and stir well with a fork.
    2 cups cassava flour, 2 tsp baking powder, 1 tsp baking soda, 1/4 tsp pink salt, 1/2 tsp black pepper, 1/2 tsp onion powder
  • Cut in butter or coconut oil into the flour mixture until it resembles coarse sand.
    1/2 cup coconut oil or butter
  • Add cheese, onions, and fried bacon to the flour mixture that resembles coarse sand.
    1 1/2 cup shredded cheddar cheese
  • Next, pour in the whipping cream.
    1 cup coconut milk or whipped cream
  • Combine until the dough comes together.
  • If too crumbly add two more tablespoons of whipping cream.
  • Get a 5 inch square or circle cookie cutter.
  • Break off a small piece of dough and place inside the cookie cutter to make 1/2 inch height of dough pressing down and rolling the dough inside the cookie cutter.
  • Remove the cookie cutter to have a 1/4 - 1/2 inch bread slice.
  • Contiue to do this with all the dough until all the dough is gone.
  • Bread slices can be made in other cookie cutter shapes and sizes.
  • I prefer sanwich size.Bake 22 - 25 minutes.
  • Remove from oven and allow to cool.
