Ingredients

  • 1 cup blueberries
  • 2 tsp pure maple syrup
  • 1/4 cup water
  • 2 tbsp fresh squeezed orange juice
  • 2 tsp tapioca flour
  • * 1 tsp fresh lemon juice optional
  • *1/2 tsp lemon zest optional

Instructions

  • First and foremost, combine everything but the orange juice and tapioca flour in a pan over medium heat.
    1 cup blueberries, 2 tsp pure maple syrup, 1/4 cup water
  • Cook for 3-4 minutes. Smash approximately 1/3 of the berries.
  • Finally, stir together the orange juice and tapioca until a slurry has been created. .
    2 tbsp fresh squeezed orange juice, 2 tsp tapioca flour
  • Cook until thickened.
  • Place into a syrup container and pour over pancakes, waffles, or crepes.
  • If adding lemon juice and lemon zest stir it in.
    *1/2 tsp lemon zest, * 1 tsp fresh lemon juice
