First and foremost, combine everything but the orange juice and tapioca flour in a pan over medium heat.
1 cup blueberries, 2 tsp pure maple syrup, 1/4 cup water
Cook for 3-4 minutes. Smash approximately 1/3 of the berries.
Finally, stir together the orange juice and tapioca until a slurry has been created. .
2 tbsp fresh squeezed orange juice, 2 tsp tapioca flour
Cook until thickened.
Place into a syrup container and pour over pancakes, waffles, or crepes.
If adding lemon juice and lemon zest stir it in.
