First, combine the coconut milk and lemon juice to create buttermilk.
2 1/2 cups coconut milk, 2 tbsp fresh lemon juice
Second, set the milk aside for 5 minutes.
Third, melt the coconut oil in the microwave for 30 to 45 seconds,
4 tbsp coconut oil
Set it aside to cool.
Combine cassava flour, monk fruit sweetener, baking powder, baking soda, and salt stirring in a separate bowl until combined.
2 1/4 cups cassava flour, 3 tbsp monk fruit sweetener, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp pink salt
Next, add almond extract, beaten eggs, cooled coconut oil and whisk together.
1 tsp almond extract, 2 whole room temperature beaten eggs
Lastly, pour the wet ingredients into the day and whisk together until just combined.
Set the batter aside for 5 to 10 minutes.
Add about a 1/4 cup or so to a waffle iron.
Cook according to your waffle iron.
Mine take about 3 minutes for soft and 5 minutes for a crispy outside.
Remove the waffle and continue with the batter in the waffle iron.
Makes approximately 5 -6 waffles.
