Ingredients

  • 4 6 oz. Salmon Fillets I used King Chinook.
  • 1 tbsp avocado oil
  • 2 tsp Dijon Mustard
  • 1/2 tsp Rosemary Wine Salt or Pink Salt Find Recipe for Rosemary Wine Salt on my blog
  • 1/4 tsp ground black pepper
  • 3 tsp pickle juice of your choice
  • 1 tbsp maple syrup
  • 1 large minced garlic clove
  • 2/3 + 2 cup + tbsp roasted coarsely chopped pistachios

Instructions

  • First, preheat the oven to 400 F.
  • Second, wash and dry the salmon.
  • Next, with a pastry brush a small amount of oil on the rimmed baking sheet or lay down a piece of parchment. 
  • Place the salmon on a baking sheet or tray.
    4 6 oz. Salmon Fillets
  • In a small bowl combine oil, mustard, salt, pepper, pickle juice, maple syrup, and garlic cloves stir until combined.
    1 tbsp avocado oil, 2 tsp Dijon Mustard, 1/2 tsp Rosemary Wine Salt or Pink Salt, 1/4 tsp ground black pepper, 3 tsp pickle juice of your choice, 1 tbsp maple syrup, 1 large minced garlic clove
  • Next, add 1/4 of the pistachio mixture to the top of each fillet. 
    2/3 + 2 cup + tbsp roasted coarsely chopped pistachios
  • Bake for 10 - 15 or until flakey.
  • Lastly, remove from the oven and allow to rest for 5 minutes before serving.
