Ingredients

  • 1 1/2 cup fresh spinach
  • 4 - 5 whole quartered strawberries
  • 3 tbsp chopped toasted hazelnuts
  • 1/4 cup watercress
  • 2 tbsp micro greens add to your liking
  • 1 tbsp thinly sliced or chopped red onions

Optional

  • 2 oz. feta cheese
  • 2 oz. cooked or leftover chicken
  • 1/4 cup fresh raspberries
  • 1/4 cup fresh blueberries

Lemon Poppy Seed Salad Dressing

  • 1/2 tsp fresh lemon zest
  • 3 tbsp strawberry vinegar
  • 1 tbsp avocado oil
  • 1/2 tsp poppy seeds
  • 2 1/2 tsp fresh lemon juice
  • 2 tsp maple syrup
  • 1 pinch of salt

Instructions

Spinach Strawberry Salad For -1

  • First, top the plate with spinach.
    1 1/2 cup fresh spinach
  • Second, top with hazelnut, watercress, micro greens, red onions, strawberries, and any optional ingredient.
    4 - 5 whole quartered strawberries, 3 tbsp chopped toasted hazelnuts, 1/4 cup watercress, 2 tbsp micro greens, 1 tbsp thinly sliced or chopped red onions
  • Lastly, add any additional optional ingredients.
    2 oz. feta cheese, 2 oz. cooked or leftover chicken, 1/4 cup fresh raspberries, 1/4 cup fresh blueberries

Lemon Poppy Seed Dressing

  • First, pour all ingredients into a small sterilized glass canning jar.
    1/2 tsp fresh lemon zest, 3 tbsp strawberry vinegar, 1 tbsp avocado oil, 1/2 tsp poppy seeds, 2 1/2 tsp fresh lemon juice, 1 pinch of salt, 2 tsp maple syrup
  • Second, place the lid on the jar.
  • Third, shake the jar until the ingredients are combined.
  • Lastly, pour the dressing onto your salad and toss to incorporate.
  • Enjoy!
