Preheat the oven to 425 F.
First, butterfly the chicken. Butterflying chicken means to cut through the center of the chicken horizontally without cutting it in half leaving both pieces attached to each other. Then, simply open like a book. Next, fold open and the chicken will appear to look a little like a butterfly. While using a kitchen mallet hammer out the chicken until thin or approximately 1/8 inch to 1/4 inch.
Second, salt and pepper, and my Garlicky Onion Seasoning on both sides of the chicken.
Thirdly, spread spinach over the top of a chicken slice, a half slice of ham, the basil and a slice of mozzarella.
At last, roll the chicken up into small rolls.
Finally, place toothpicks in them to keep the chicken closed.
Place your chicken rolls onto an oiled dish.
Lastly, place inside oven and bake for 25 – 35 minutes. Remove from oven and allow to cool slightly.
