American Chicken Saltimbocca is an incredible mix of salty ham, gooey cheese, spinach, basil, and sweet maple mustard sauce. At first bite, these flavors will have you singing for joy! Visually stunning but incredibly easy to make. While it may take a little extra time in the kitchen it is so worth the end result.
Honestly, I love creating new recipes in my kitchen. Recently I was asked how I came up with this recipe. While going through my refrigerator I found spinach, fresh basil, ham slices (no nitrates, etc.), and mozzarella. In fact, once I looked at my ingredients and bang inspiration hit. It made me think of Saltimbocca. Additionally, I wanted to add some garlicky flavor and therefore added my Garlicky Onion Seasoning.
American Chicken Saltimbocca Notes:
Firstly, I butterflied my chicken and hammer it out. Butterflying chicken means to cut through the center of the chicken horizontally without cutting it in half leaving both pieces attached to each other. Then, simply open like a book. Next, fold open and the chicken will appear to look a little like a butterfly. While using a kitchen mallet hammer out the chicken until thin. In any case, I cut the one butterflied breast into two or three strips. Thereby, made it easier to work with. Simply lay the spinach, basil, ham, and mozzarella down and roll-up. Not only is this dish delicious but it is beautiful to look at. Serve with my Maple Mustard Sauce.
In the end, I put a small slice of mozzarella on top of the rolls, the drizzled Maple Mustard Sauce and topped with Basil Chiffonade. Incredibly this made 9 American Chicken Saltimbocca rolls. One small piece of chicken was left which I wrapped in ham.

American Chicken Saltimbocca
Ingredients:
- 2 lbs chicken breasts
- 1 tablespoon Garlicky Onion Seasonings
- 8 – 10 spinach leaves per roll
- 1 half a slice of thin ham (luncheon meat – no nitrates)
- 1 -2 basil leaves per roll
- 1 small slice of mozzarella per roll
- salt and pepper
Directions:
Preheat the oven to 425 F. First, butterfly the chicken. Butterflying chicken means to cut through the center of the chicken horizontally without cutting it in half leaving both pieces attached to each other. Then, simply open like a book. Next, fold open and the chicken will appear to look a little like a butterfly. While using a kitchen mallet hammer out the chicken until thin or approximately 1/8 inch to 1/4 inch.
Second, salt and pepper, and my Garlicky Onion Seasoning on both sides of the chicken. Thirdly, spread spinach over the top of a chicken slice, a half slice of ham, the basil, and a slice of mozzarella. At last, roll the chicken up into small rolls. Finally, place toothpicks in them to keep the chicken closed. Place your chicken rolls onto an oiled dish. Lastly, place inside oven and bake for 25 – 35 minutes. Remove from oven and allow to cool slightly.Lastly, Serve with maple mustard. Finally at the end, a slice of mozzarella and top with chiffonade basil.
Chef’s Notes:
*Remember to remove toothpicks before serving.
*Chiffonade means to roll the basil into a cone and slice the basil. I then go back and slice the strips into small pieces.

- 1-2 leaves of basil per chicken roll
- 1 slice of mozzarella per chicken roll
Instructions

- Thirdly, spread spinach over the top of a chicken slice, a half slice of ham, the basil and a slice of mozzarella.
- At last, roll the chicken up into small rolls.
- Finally, place toothpicks in them to keep the chicken closed.
- Place your chicken rolls onto an oiled dish.
- Lastly, place inside oven and bake for 25 – 35 minutes. Remove from oven and allow to cool slightly.
Serve with maple mustard. Finally at the end, a slice of mozzarella and top with chiffonade basil.
