Ingredients

  • 4 chicken quarters (legs and thighs)
  • 3 tbsp cassava flour
  • 2 tbsp garlicky onion seasoning see recipe on my blog
  • 1 tbsp dehydrated onion
  • 1 tsp pink salt
  • 1 tsp dill weed
  • 1/2 tsp dried chives
  • 1/4 cup chicken broth (liquid)

Oil to crisp chicken

  • 2 tsp coconut oil

Instructions

  • Preheat oven to 350 F.
  • Place cassava flour, garlicky onion seasoning, dehydrated onions, pink salt, dill weed, dried chives in the oven-proof bag.
  • Tightly twist the bag and hold closed and shake until ingredients are thoroughly combined. 
  • Shake so that all the chicken pieces are covered with seasoning. 
  • Next, add chicken quarters to the bag.
  • Again twist the bag several times hold bag closed and shake until the chicken pieces are completely covered.
  • Carefully pour chicken broth into the oven bag behind the chicken as not to remove the seasonings from the chicken.
  • Close with an oven tie or tie the bag shut.
  • Place it in the oven bag on top of a roasting pan covered in tin foil (to make for easier clean-up) and place in the oven and bake one hour.
  • Carefully cut the bag so that the chicken quarters are revealed.
  • Melt coconut oil.
  • Using a pastry brush brush coconut oil onto the skin of chicken to brown the skin.
  • Turn the oven on to broil and place chicken back into the oven for a minute or more until the skin becomes crisp. 
  • Remove from oven allow to cool 10 minutes. Serve
