Ingredients
4chicken quarters (legs and thighs)
3tbspcassava flour
2 tbspgarlicky onion seasoningsee recipe on my blog
1tbspdehydrated onion
1tsppink salt
1tspdill weed
1/2tspdried chives
1/4cupchicken broth (liquid)
Oil to crisp chicken
2tspcoconut oil
Instructions
Preheat oven to 350 F.
Place cassava flour, garlicky onion seasoning, dehydrated onions, pink salt, dill weed, dried chives in the oven-proof bag.
Tightly twist the bag and hold closed and shake until ingredients are thoroughly combined.
Shake so that all the chicken pieces are covered with seasoning.
Next, add chicken quarters to the bag.
Again twist the bag several times hold bag closed and shake until the chicken pieces are completely covered.
Carefully pour chicken broth into the oven bag behind the chicken as not to remove the seasonings from the chicken.
Close with an oven tie or tie the bag shut.
Place it in the oven bag on top of a roasting pan covered in tin foil (to make for easier clean-up) and place in the oven and bake one hour.
Carefully cut the bag so that the chicken quarters are revealed.
Melt coconut oil.
Using a pastry brush brush coconut oil onto the skin of chicken to brown the skin.
Turn the oven on to broil and place chicken back into the oven for a minute or more until the skin becomes crisp.
Remove from oven allow to cool 10 minutes. Serve
