Chicken’s in the Bag! Literally, this recipe is quick and easy to make just toss your leg quarters (leg and thigh) in an oven cooking bag which means easy clean up as well. In fact, using an oven cooking bag makes cooking chicken versatile. Simply change the seasonings you add to the chicken and you have a different flavor. However, this recipe calls for a garlicky onion seasoning making it lip-smacking good.
How to Cook In an Oven Bag:
Needless to say, the for the easiest clean-up place tin foil on the broiling pan. Not to mention, oven cooking bags can be purchased at Amazon. Believe it or not, but cooking bags make cooking easy. To tell the truth, I have used cooking bags for many years as it keeps the moisture in. However, you must be careful when opening or cutting open as the bag is full of steam. In all honesty, I always wear oven mitts when opening up or cutting open the bag.
Above all, I highly suggest reading the instructions that come with the bags and follow the directions. In any case, the bags are simple to use. I personally add seasoning of my choice and the meat of my choice and cook according to directions. Place oven on the temperature that the instructions call for and cook accordingly. That’s it in a nutshell.
What’s going on in my life?
Today I woke up with a horrendous headache from a sinus infection. The sinus infection also caused mild vertigo. The vertigo is bad when turning my head quickly, therefore, no quick movements. I had to get up slowly and take a moment before moving in any direction. In any case, I have had vertigo really bad to where I couldn’t lay down at all. It is worse on my right side than my left side. In all honesty, I hope that I am able to lay down and sleep tonight.
So what to make for dinner when you are not feeling well and want something tasty. I had pulled out chicken quarters from the freezer last night. My brain started swirling with ideas and then checking them off as the amount of time or attention needed to complete the dish. I started thinking about what did women do when I was young. It made me think of Shake and Bake. So this recipe is a little throwback to when I was a kid or what I would call a vintage recipe. I remembered that I had a couple of oven cooking bags in my pantry so I knew I was definitely going to use those. That meant I only needed to focus on what seasonings to add to the chicken. Some of my favorite flavors to add are onion and garlic.
When Everything Goes Wrong Chicken In The Bag
I decided to use my Garlicky Onion Seasoning and boost the flavor. Why not add some dill weed, chives, and dehydrated onion. I checked my pantry to make sure I had enough Garlicky Onion Seasoning as I didn’t feel like making up a new batch. Sure enough, there was more than enough to use. That meant rinsing off the chicken placing the ingredients in the bag shaking it up so that all the ingredients get on the chicken piece then put the tie on the bag and place in the oven. Yep, it’s that easy.
Have you ever noticed that some days no matter what you do some things go wrong? What happened? Well, I couldn’t find the zip tie to close the oven bag with. What to do? The bag was more than big enough so I just cut off a small portion of the top of the bag about a 1/2 inch worth and used it to tie the bag shut. Bingo Bango bag was closed. I placed it on top of my roasting pan and placed it in the oven. Then just sit back and enjoy until the timer on the oven goes off. Then snip the plastic oven bag off and add a little coconut oil to the skin of the chicken

Ingredients:
- 4 chicken quarters (legs and thighs)
- 3 tbsp cassava flour
- 2 tbsp garlicky onion seasoning
- 1 tbsp dehydrated onion
- 1 tsp pink salt
- 1 tsp dill weed
- 1/2 tsp dried chives
- `1/4 cup chicken broth (liquid)
Directions:

Ingredients
- 4 chicken quarters (legs and thighs)
- 3 tbsp cassava flour
- 2 tbsp garlicky onion seasoning see recipe on my blog
- 1 tbsp dehydrated onion
- 1 tsp pink salt
- 1 tsp dill weed
- 1/2 tsp dried chives
- 1/4 cup chicken broth (liquid)
Oil to crisp chicken
- 2 tsp coconut oil
Instructions
- Preheat oven to 350 F.
- Place cassava flour, garlicky onion seasoning, dehydrated onions, pink salt, dill weed, dried chives in the oven-proof bag.
- Tightly twist the bag and hold closed and shake until ingredients are thoroughly combined.
- Shake so that all the chicken pieces are covered with seasoning.
- Next, add chicken quarters to the bag.
- Again twist the bag several times hold bag closed and shake until the chicken pieces are completely covered.
- Carefully pour chicken broth into the oven bag behind the chicken as not to remove the seasonings from the chicken.
- Close with an oven tie or tie the bag shut.
- Place it in the oven bag on top of a roasting pan covered in tin foil (to make for easier clean-up) and place in the oven and bake one hour.
- Carefully cut the bag so that the chicken quarters are revealed.
- Melt coconut oil.
- Using a pastry brush brush coconut oil onto the skin of chicken to brown the skin.
- Turn the oven on to broil and place chicken back into the oven for a minute or more until the skin becomes crisp.
- Remove from oven allow to cool 10 minutes. Serve
