Ingredients

  • 3/4 cup almond milk
  • 2 tbsp fresh lemon juice
  • 1 cup cassava flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp monk fruit sweetener
  • 1 tbsp powdered monk fruit sweetener find the recipe on my blog
  • 2 tsp lemon zest
  • 3 tbsp coconut oil
  • 1 whole beaten egg
  • 2/3 + cup of Blueberries plus more berries to decorate

Instructions

  • First and foremost preheat the waffle iron.
  • Second, combine the lemon juice and almond milk and allow to sit for 10 minutes (to create buttermilk).

  • Third, toss the vanilla monk fruit sweetener with the blueberries so they don't fall to the bottom of the batter.
  • Combine the dry ingredients which are cassava flour, baking powder, salt, monk fruit sweetener, and lemon zest.

  • Stir until combined.
  • Next, combine the wet ingredients: the melted coconut oil and beaten egg to the almond milk mixture and stir to combine.

  • Next, add the wet to the dry and stir until just combined.
  • Don't worry about lumps.
  • Allow the batter to sit for thirty minutes.
  • Finally, fold in the blueberries.
    2/3 + cup of Blueberries plus more berries to decorate
  • Next, add about 1/4 to 1/3 cup of batter to the waffle iron.
  • Lastly, spray or brush the waffle iron with coconut oil.
  • Cook according to your waffle iron directions.
  • Typically 4 -6 minutes per waffle cook until golden brown.
  • Dust with powdered Vanilla monk fruit sweetener and blueberry sauce or maple syrup.
