Gluten-Free Blueberry French Toast

Instructions

  • First, cut the bread into 1/2 inch or more slices.
    1/2 a loaf of Gluten-Free Blueberry Bread
  • Second, in an 8x 8 inch shallow dish combine the beaten eggs, cassava flour, vanilla, and nut milk of choice.
    3 whole beaten eggs, 2 tsp cassava flour, 1 tsp pure vanilla , 3/4 cup almond flour
  • Third, heat the coconut oil in a skillet over medium heat.
    1 tsp coconut oil
  • While heating the skillet, dip the slices of bread into the egg batter, sure to dredge both sides.
  • Next, place the battered bread into the heated pan.
  • Cook the French Toast for 1 - 2 minutes.
  • Finally, using a spatula flip the bread and cook the other side for 1 - 2 minutes.
  • Remove from the pan and plate.
  • Lastly, dust with powdered monk fruit sweetener and serve with maple syrup, whipped cream, lemon curd, or blueberry syrup.
