Ingredients

  • 1/2 a loaf of Gluten-Free Blueberry Bread
  • 3 beaten eggs
  • 2 tsp cassava flour
  • 1 tsp pure vanilla
  • 3/4 cup nut milk
  • 1 tsp coconut oil
  • 2 tsp powdered monk fruit

Directions:

First, cut the bread into 1/2 inch or more slices. Second, in an 8x 8 inch shallow dish combine the beaten eggs, cassava flour, vanilla, and nut milk of choice. Third, heat the coconut oil in a skillet over medium heat. While heating the skillet, dip the slices of bread into the egg batter, sure to dredge both sides. Next, place the battered bread into the heated pan. Cook the French Toast for 1 – 2 minutes. Finally, using a spatula flip the bread and cook the other side for 1 – 2 minutes. Remove from the pan and plate.
