Gluten-Free Brie Strawberry Pies

Ingredients

Pastry Ingredients

  • 3 oz. cream cheese
  • 4 oz. of butter
  • 1 + 4 cup + tbsp cassava flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp vanilla bean powder find the recipe on my blog
  • 3 tsp powdered vanilla monk fruit sweetener find the recipe on my blog
  • 1 tbsp fresh lemon juice

Egg Wash

  • 1 whole large egg
  • 2 tsp water

Filling Ingredients

  • 3/4 cup freshly chopped strawberries
  • 1/4 cup monk fruit sweetener
  • 2 tsp tapioca flour
  • 1/8 tsp salt
  • 1/2 tsp balsamic vinegar
  • 3 - 4 oz. of Brie

Instructions

Pastry Directions

  • First, in a stand-up mixer blend the cream cheese until smooth using the wire whisk.
  • Second, scrape down the sides and mix once more.
  • Third, scrape down the sides and add in the butter blend until smooth.
  • In another bowl add the cassava flour baking powder, baking soda, vanilla powder, and monk fruit sweetener and stir until combined.
  • Next, place the flour mixture into a fine mesh sieve and sift half of it into the cream cheese mixture along with the lemon juice.
  • Finally, sift in the remaining flour.
  • The dough will be clumpy.
  • Remove from the bowl onto a  sheet of plastic wrap and press the dough together until it comes together.
  • Form it into a ball.
  • Let rest while you make the filling.

Egg Wash Directions

  • Beat the egg with the water until thoroughly blended.

Making The Strawberry Filling

  • First, and foremost preheat the oven to 350 F.
  • Second, add the chopped strawberries, monk fruit sweetener, tapioca flour, and salt.
  • Third, cook over medium heat for 10 -12 minutes or until thickened and bubbly.
  • Remove from heat and allow to cool.
  • Most importantly, filling needs to be at room temperature before use.

Putting The Pastry Together

  • First, line a cookie sheet with parchment paper.
  • Second, roll the crust out between two sheets of plastic wrap.
  • Third, roll into a rectangle of about 1/8 - 1/4 inch thick.
  • Use a 3 1/2-inch circle. (Heart-shaped cookie cutter for Valentine's.
  • Perhaps a bunny cookie cutter for Easter).
  • Cut out 12 circles of dough.
  • Next, place 6 of the shapes or bottoms onto the prepared cookie rack.
  • Place spread 1 tsp of strawberry filling and spread leaving a small edge.
  • Place a small slice or chunk of Brie on top of a bottom dough circle.
  • Using a 1-inch heart-shaped cookie cutter cut out the center of the remaining 6 dough circles (the tops).
  • This will allow for air to be released.
  • Brush the bottom outside edges with the egg wash.
  • Add the top to the pastry creating a sandwich.
  • Press down on the edges to seal.
  • Place the cookie sheet into the fridge and allow to chill for at least 20 minutes.
  • Remove pies from the fridge and brush the outside with the egg wash.
  • Lastly, cook for 20 -25 minutes or until lightly browned.
  • Allow to cool before serving.
  • Makes 12 pastries
