- 4 oz of butter
- 1 cup + 4 tbsp cassava flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp vanilla bean powder
- 3 tsp powdered monk fruit sweetener
- 1 tbsp fresh lemon juice
Directions:
First, in a stand-up mixer blend the cream cheese until smooth using the wire whisk. Second, scrape down the sides and mix once more. Third, scrape down the sides and add in the butter blend until smooth. In another bowl add the cassava flour baking powder, baking soda, vanilla powder, and monk fruit sweetener and stir until combined. Next, place the flour mixture into a fine mesh sieve and sift half of it into the cream cheese mixture along with the lemon juice. Finally, sift in the remaining flour. The dough will be clumpy. Remove from the bowl onto a sheet of plastic wrap and press the dough together until it comes together. Form it into a ball. Let rest while you make the filling.
Egg Wash
- 1 large room-temperature egg
- 2 tsp water
Directions:
First, beat the egg with the water until thoroughly blended.
Filling Ingredients
- 3/4 cup finely chopped strawberries
- 1/4e cup monk fruit sweetener
- 1 tbsp tapioca flour
- 1/4 tsp pink salt
- 1/2 tsp balsamic vinegar
- 2.5 oz of brie
Directions:
First, and foremost preheat the oven to 350 F. Second, add the chopped strawberries, monk fruit sweetener, tapioca flour, and salt. Third, cook over medium heat for 10 -12 minutes or until thickened and bubbly. Remove from heat and allow to cool. Most importantly, the filling needs to be at room temperature before use.
Putting the Pastry Together
First, line a cookie sheet with parchment paper. Second, roll the crust out between two sheets of plastic wrap. Third, roll into a rectangle of about 1/8 – 1/4 inch thick. Use a 3 1/2-inch circle. (Heart-shaped cookie cutter for Valentine’s. Perhaps a bunny cookie cutter for Easter). Cut out 12 shapes of dough. Next, place 6 of the shapes or bottoms onto the prepared cookie rack. Place a small slice or chunk of Brie on top of a bottom dough circle. Place spread 1 tsp of strawberry filling and spread leaving a small edge. Using a 1-inch heart-shaped cookie cutter cut out the center of the remaining 6 dough circles (the tops). This will allow for air to be released.
Brush the bottom outside edges with egg wash. Add the top to the pastry creating a sandwich. Press down on the edges to seal. Place the cookie sheet into the oven and allow to chill for at least 20 minutes. Remove pies from the fridge and brush the outside with the egg wash. Lastly, cook for 20 -25 minutes or until lightly browned. Allow to cool before serving. Makes 12 pastries
