Ingredients

  • 1 whole recipe Peanut Butter Sandwich Cookies

Chocolate Covering

  • 1 1/2 cups chocolate chips with stevia
  • 2 tbsp coconut oil

Instructions

  • First, make a full recipe of Peanut Butter Sandwich Cookies.

  • In conclusion, place the cookies in the freezer for one to two hours before dipping the chocolate.

Cookie Prep for Drying

  • First, cover a cookie tray with tin foil for easier clean-up.
  • Second, place a cooling rack into the tray.
  • Set aside.

Chocolate Coating

  • First, fill the bottom of a double boiler with water about 2 to 3 inches of water.
  • Second, put the double boiler on the stove with the water in the bottom
  • Third, add the chocolate chips and coconut oil to the top of a double boiler.
    1 1/2 cups chocolate chips with stevia, 2 tbsp coconut oil
  • Turn the stove on to medium.
  • As the water heats steam will be released (be careful not to get burned).
  • Finally, stir continuously until all the chocolate is melted.
  • Remove the cookies from the freezer.
  • Next, remove the chocolate from the heat.
  • Using a fork or chocolate tools dip each cookie into the chocolate.
  • Push the cookie under the chocolate.
  • Using the fork pull the cookie out of the chocolate and lightly tap the fork getting rid of any excess chocolate.
  • Lastly, place the cookies onto the prepped cooling rack.
  • Continue until all the cookies are dipped.
