Gluten-Free Coconut Macaroon Cookies

Gluten-Free Marzipan Macaroon Cookies Recipe is homemade from scratch, a twist on a popular coconut cookie. Made with toasted coconut and almond flavors.

Ingredients

Chocolate Dipping Ingredients:

  • 1/2 cup homemade chocolate chips or store-bought see recipe on my blog
  • 1 tsp coconut oil

Instructions

  • First, preheat oven to 350 F.
  • Second, combine the coconut flakes, coconut sweetened condensed milk, coconut milk, almond extract, and the two egg whites in a food processor.
    2 cup desiccated coconut flakes, 1 recipe coconut sweetened condensed milk, 1 tsp almond extract, 2 egg whites, 3 tbsp canned coconut milk just the thick part
  • Process until it can be formed into a ball.
  • Remove from the processor and knead.
  • Finally, combine the marzipan batter with the macaroon batter until they are well incorporated.
  • Lastly, scoop out cookies on to an oil baking sheet.
  • Makes approximately 50 cookies.
  • Cook for about 15- 18 minutes.
  • Allow to cool.
  • Place into an airtight container.

Chocolate Dipping Directions:

  • First, place chocolate chips and coconut oil into a bowl.
    1/2 cup homemade chocolate chips or store-bought, 1 tsp coconut oil
  • Next, place bowl in the microwave.
  • Finally, melt in 30 second intervals.
  • Stop and stir.
  • Continue putting back into the microwave until chocolate is melted.
  • Lastly, dip or drizzle cookies with the chocolate.

Nutritional facts are without the chocolate.
