First and foremost, If you have raw shrimp that you need to peel you will also need to devein them.
3 lbs raw peeled shrimp
To devein them make a slit down the back of the shrimp and remove the dark vein.
First, in a bowl combine desiccated coconut, cassava flour, salt, pepper, and garlic powder.
2/4 cups desiccated coconut , 1 1/4 cup cassava flour, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder
In a separate bowl combine beaten coconut milk and lemon juice (let sit 5 minutes).
2 beaten eggs, 1/2 cup Canned unsweetened full fat coconut milk, 1 tbsp fresh squeezed lemon juice
Next beat eggs into the coconut milk with lemon juice.
Working in batches place 5-8 shrimp into the buttermilk mixture, once shrimp is coated dip into the flour mixture.
Then repeat.
