Ingredients

Marinade Ingredients

  • 3 lbs. whole chicken breast halves
  • 1/2 cup dill pickle juice
  • 2/3 cup dairy-free milk
  • 2 tsp fresh lemon juice
  • 1 whole egg
  • 1/2 cup of avocado oil approximately
  • 4 whole gluten-free hamburger buns or store-bought see the recipe on my blog for Gluten-Free Hamburger Buns
  • 4 leaves of lettuce
  • 8 whole dill pickle slices

Breading and Sauce

  • 1/4 cup of my Chick-fil-A Sauce find this recipe on my blog
  • 1 cup cassava flour
  • 3 tbsp coconut sugar
  • 1/4 tsp smoked paprika
  • 1/2 tsp baking powder
  • 1 tsp black pepper
  • 1/2 tsp pink salt
  • 1/2 tsp chili powder

Instructions

Marinating The Chicken

  • First, pour the ingredients for the marinade into a bowl or a gallon-size sealable plastic bag.
    1/2 cup dill pickle juice
  • Second, cut the thin ends off the chicken breast.
  • Third, cut the rest of the chicken breast in half.
  • Fourth, place the cut chicken into the plastic bag to marinate.
    3 lbs. whole chicken breast halves
  • Let the chicken marinate for an hour or more.

Breading

  • First, combine the breading into a quart-size plastic bag.
    1 cup cassava flour, 1/4 tsp smoked paprika, 1/2 tsp baking powder, 1 tsp black pepper, 1/2 tsp pink salt, 1/2 tsp chili powder, 3 tbsp coconut sugar
  • Second, seal and shake the bag until the ingredients are combined.
  • Third, pour the ingredients from the bag onto a plate.
  • Add the dairy-free milk and lemon juice together (to create buttermilk) and wait 10 minutes.
    2/3 cup dairy-free milk , 2 tsp fresh lemon juice
  • Next, beat the egg.
    1 whole egg
  • Add the beaten egg to the buttermilk and add to a plate.
  • Dip the chicken into the egg mixture and then dip into the breading.
  • Once, breaded place the chicken onto a sheet pan with a rack over it.
  • Finally, heat the oil in a pan over medium heat.
    1/2 cup of avocado oil
  • Add the breaded chicken to the pan and cook 3-5 minutes per side.
  • Remove to a rack.
  • Allow to cool slightly before serving.
  • Lastly, slather a gluten-free bun with Chick-fil-A sauce and top with chicken one slice of lettuce, and pickles.
    4 whole gluten-free hamburger buns or store-bought, 4 leaves of lettuce, 8 whole dill pickle slices, 1/4 cup of my Chick-fil-A Sauce
