Ingredients

  • 1/2 cup coconut milk (thick part only)
  • 1/2 cup shredded cucumbers liquid squeezed out
  • 2 tbsp fresh lemon juice
  • 1 tsp rosemary wine salt see recipe on blog
  • 3 cloves minced garlic
  • 1 tbsp dried minced onion
  • 2 tbsp minced fresh dill weed
  • 2 tsp powdered beef broth
  • 1 cup caramelized onions
  • 1 lb ground turkey

Instructions

  • Preheat oven to 350 F.
  • Oil a baking sheet or baking stone.
  • First, shred the cucumbers and place inside a clean tea towel and squeeze out any excess liquid and set aside.

  • Secondly, open a can of coconut milk and remove only 1/2 cup of the thick coconut milk and place it into a small bowl.

  • Thirdly, combine drained shredded cucumbers, coconut milk, lemon juice, rosemary wine salt, minced garlic, dried minced onion, minced dill weed, and powdered beef bone broth until thoroughly combined.

  • Finally, fry up the diced onions until caramelized remove from the heat and allow it to cool.
    1 cup caramelized onions
  • Once, cooled add coconut milk mixture and caramelized onions to ground turkey until thoroughly combined.
    1 lb ground turkey
  • Next roll into meatballs.
  • Place rolled meatballs onto an oiled baking sheet or baking stone.
  • Spray the turkey meatballs and place into the oven
  • Lastly, bake for 20 - 30 minutes or until cooked through and brown.
  • Remove from oven and allow to cool.

Serving Suggestions:

  • Serve with chopped tomato, cucumbers, onions, and extra tzatziki sauce.
  • Or serve with cucumber sauce (Tzatziki sauce) and fresh dill.
