Gluten-Free Greek Turkey Meatballs are moist and tender with a luscious flavor.  These tasty little morsels with fresh herbs and vegetables will leave your mouth salivating for more. Shredded cucumbers, lemon juice, and fresh herbs are baked inside these meatballs. All in all, Gluten-Free Greek Turkey Meatballs are low in calories and only 6 carbohydrates per quarter-pound serving. Instead of yogurt, I have replaced it with the thick part from a can of unsweetened coconut milk. In conclusion, herbs, lemon juice, grated cucumbers, and garlic change the flavor of coconut milk. However, my Homemade Coconut Milk Yogurt can also be used.

Most importantly when shredding the cucumbers make sure to squeeze all the liquid out of them as it will thin out the coconut milk. Furthermore, these meatballs will not be as firm as you are used to.

A perfect appetizer for the Super Bowl or a party.

Gluten-Free Greek Turkey Meatballs Notes:

In all honesty, Greek food is one of my favorite cuisines. Not only do I use canned unsweetened coconut milk inside this recipe I also use my Rosemary Wine Salt. At any rate, I found cocktail cucumbers at my local Costco and found that 1 1/2 cups of shredded cucumbers turned out to be approximately 4 cocktail cucumbers. Powdered Lano Life Beef Bone Broth is my go-to powdered broth incredibly I have been able to find it at my local stores. Therefore, I highly recommend that you do your own research to find out if this product is one you want to add to your pantry.

In any case, my daughter and I are on a summer shred challenge so I have been racking my brain to find new healthy recipes that will fit into my daughter’s and mine lifestyle. Needless to say, an idea of Greek food popped into my head. However, the next step was to create some sort of dinner item. I decided on turkey the next step was to add flavor. Nonetheless, caramelized onions boost the flavor of the meat and add a little texture.

Gluten-Free Greek Turkey Meatballs

Ingredients:

  • 1/2 a cup (about 4 cocktail cucumbers) shredded and liquid squeezed out
  • 1/2 cup coconut milk (thick part only)
  • 2 tbsp fresh lemon juice
  • 1 tsp rosemary wine salt
  • 3 cloves minced garlic
  • 1/2 tsp Za’atar
  • 1 tbsp minced onion
  • 2 tbsp minced fresh dill weed
  • 2 tsp powdered beef bone broth
  • 1 cup diced caramelized onions
  • 1 lb ground turkey
  • 2 sprays of avocado oil

Directions:

Preheat oven to 350 F. Oil a baking sheet or baking stone. First, shred the cucumbers and place them inside a clean tea towel and squeeze out any excess liquid, and set aside.Shredded cucumber Secondly, open a can of coconut milk and remove only 1/2 cup of the thick coconut milk and place it into a small bowl. Thirdly, combine drained shredded cucumbers, coconut milk, lemon juice, rosemary wine salt, minced garlic, dried minced onion, minced dill weed, and powdered beef bone broth until thoroughly combined. Finally, fry up the diced onions until caramelized remove them from the heat, and allow them to cool. Once, cooled add coconut milk mixture and caramelized onions to ground turkey until thoroughly combined.Combining the ingredients Next, roll it into meatballs. Place rolled meatballs onto an oiled baking sheet or baking stone. Spray the turkey meatballs and place them into the oven. Lastly, bake for 20 – 30 minutes or until cooked through and brown.   • Finally, fry up the diced onions until caramelized remove from the heat and allow it to cool.
    1 cup caramelized onions
  • Once, cooled add coconut milk mixture and caramelized onions to ground turkey until thoroughly combined.
    1 lb ground turkey
  • Next roll into meatballs.
  • Place rolled meatballs onto an oiled baking sheet or baking stone.
  • Spray the turkey meatballs and place into the oven
  • Lastly, bake for 20 - 30 minutes or until cooked through and brown.
  • Remove from oven and allow to cool.

Serving Suggestions:

  • Serve with chopped tomato, cucumbers, onions, and extra tzatziki sauce.
  • Or serve with cucumber sauce (Tzatziki sauce) and fresh dill.
