Gluten-Free Ham Cheese Pinwheels

Ingredients

Gluten-Free Pastry Dough

  • 3 oz cream cheese
  • 4 oz butter at room temperature
  • 1 + 4 cup + tbsp Cassava Flour
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp baking powder
  • 2 tbsp freshly grated parmesan cheese
  • 3 + 1 tbsp + tsp freshly squeezed lemon juice

Filling Ingredients

  • 3 oz. cream cheese
  • 3 whole chopped green onions (white and green parts)
  • 2 tbsp chopped chives
  • 4 oz. thinly chopped deli Ham without nitrates
  • 2 oz. shredded cheese of choice or sliced cheese

Egg Wash

  • 1 whole egg
  • 2 tsp of water

Instructions

Gluten-Free Pastry Dough

  • First, preheat the oven to 375 F.
  • Second, oil a baking sheet or baking stone.
  • Third, with a hand mixer, in a large bowl, cream the cream cheese scraping down the sides until it is smooth.
    3 oz cream cheese
  • Fourth, cream the butter and cream cheese together.
    4 oz butter at room temperature
  • Fifth, in a separate bowl, combine the cassava flour, garlic powder, onion powder, baking powder, baking soda, and parmesan cheese and stir.
    1 + 4 cup + tbsp Cassava Flour, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp smoked paprika, 1/2 tsp baking powder, 2 tbsp freshly grated parmesan cheese
  • Finally, add 1/4 of the flour mixture to the cream cheese mixture until combined.
  • Add the lemon juice to the mixture.
    3 + 1 tbsp + tsp freshly squeezed lemon juice
  • Add another 1/4 of the flour mixture and blend.
  • Continue adding the rest of the mixture to the cream cheese mixture.
  • Using your hands squish the batter together into a ball.
  • Allow the dough to sit for 30 minutes before rolling it out.
  • *If the batter is too crumbly add a tsp of water at a time until it stays together.

How to Roll Out the Pastry

  • Place the dough between two sheets of plastic wrap.
  • Most importantly always make one sheet longer than the other so it is easily done when it needs to be separated.
  • Roll half the dough into an 8 x 8-inch square using a rolling pin or wine bottle.
  • Lift the top plastic wrap every so often to make sure the dough is not getting stuck underneath
  • Remove the plastic wrap from the top.
  • Cut off the edges leaving only a 7 x 7 square.
  • Add the excess dough to the remaining half of the dough.
  • Knead the dough together.
  • Proceed to place the dough in between a piece of plastic wrap.
  • Top the other piece of plastic wrap.
  • Roll the second half of the dough into an 8 x 8-inch square using a rolling pin or wine bottle.
  • Lift the top of the plastic wrap and cut off the edges.
  • It should roughly be 7 x 7 inches.

Pastry Filling

  • First, blend the at-room cream cheese until smooth
    3 oz. cream cheese
  • Second, stir the cream cheese, green onions, and chives until thoroughly combined.
    3 whole chopped green onions (white and green parts), 2 tbsp chopped chives
  • Finally, spread half of the cream cheese mixture on each pastry dough square.
  • Spread the cream cheese mixture out evenly with an uneven spatula leaving about a 1/2 inch border.
  • Next, lay down the ham and the cheese leaving a 1/2 inch border.
    4 oz. thinly chopped deli Ham without nitrates, 2 oz. shredded cheese of choice or sliced cheese
  • If the dough is slightly uneven start with the thinnest side.
  • Use the bottom plastic wrap to help roll the dough into logs.
  • You will need to remove the plastic wrap slightly.
  • Wrap the pastry log in plastic wrap.
  • Place the dough into the fridge for approximately 30 minutes.
  • Repeat this process with the other half of the dough.
  • Remove from the fridge and cut each log into 4-6 pieces.
  • Place on a baking sheet and return to the fridge for 30 minutes.

Egg Wash

  • First, whisk the egg and water together.
    1 whole egg, 2 tsp of water
  • Next, brush the pastries with the egg wash using a pastry brush.
  • Sprinkle with salt, sesame seeds, everything bagel seasoning, or parmesan.

Baking

  • Place the cookie sheet into the preheat oven and bake for 18 -25 minutes.
  • Once lightly browned and the cheese is melting they are done.
  • Remove from the oven and allow to cool.
  • Makes approximately 12 pinwheels.
