Ingredients

  • 3/4 cup canned coconut milk or heavy cream
  • 1/2 cup nut milk or milk
  • 1 whole vanilla bean caviar
  • 2 tbsp maple sugar
  • 2 whole egg yolks
  • 1 tbsp unsweetened cocoa
  • 1/2 tsp instant espresso
  • 3 tbsp tapioca
  • 1 pinch of salt

Instructions

  • First, whisk together the coconut milk and nut milk.
    3/4 cup canned coconut milk or heavy cream, 1/2 cup nut milk or milk
  • Second, slice the vanilla bean in half and scrape out the caviar.

  • Next, beat the eggs.
    2 whole egg yolks
  • Finally, whisk the egg and the milk together.
  • Add in the vanilla caviar, maple sugar, cocoa, instant espresso, tapioca, and salt.
    2 tbsp maple sugar, 1 tbsp unsweetened cocoa, 1/2 tsp instant espresso, 3 tbsp tapioca, 1 pinch of salt
  • Whisk the ingredients into the milk mixture.
  • Pour this mixture into a double-boiler.
  • Turn stove on to medium heat and stir continuously until the mixture thickens 10 - 15 minutes.
  • Lastly, remember that the mixture will continue to thicken even once it has been removed.
  • Cook until desire consistency.
  • Finally, allow it to cool slightly,
  • Place into a bowl and place plastic wrap directly onto the mixture. 
  • The plastic needs to be touching the mixture so that it does not form a skin.
  • Can be used warm or allowed to cool.
  • Use to drizzle of pancakes, waffles, crepes, ice cream, etc

Notes:

  • If you feel there are lumps place through a sieve before serving.
