Ingredients

  • 1+ 3 cup + tbsp cassava flour
  • 1/4 cup monk fruit sweetener
  • 2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 tsp cardamom
  • 1/2 cup dairy-free sour cream
  • 1 cup nut milk
  • 3 whole eggs
  • 1/4 cup coconut oil melted and cooled

Instructions

  • First, preheat the waffle iron.
  • Second, in a bowl stir together the cassava flour, monk fruit sweetener, baking soda, and cardamom.

  • Third, whisk together the vanilla, sour cream, nut milk, eggs, and coconut oil just combined.
    1/2 tsp vanilla, 1/2 cup dairy-free sour cream, 1 cup nut milk, 3 whole eggs, 1/4 cup coconut oil melted and cooled
  • Allow the batter to sit for half an hour.
  • Add a 1/4 cup of batter to the hot waffle iron.
  • Cook for approximately 3 - 5 minutes.
  • Remove and serve with whipped cream, fruit, jam or Norwegian brown (goat) cheese.
  • Makes approximately 10 waffles
