First, preheat the waffle iron.
Second, in a bowl stir together the cassava flour, monk fruit sweetener, baking soda, and cardamom.
1+ 3 cup + tbsp cassava flour, 1/4 cup monk fruit sweetener, 2 tsp baking powder, 1 tsp cardamom
Third, whisk together the vanilla, sour cream, nut milk, eggs, and coconut oil just combined.
1/2 tsp vanilla, 1/2 cup dairy-free sour cream, 1 cup nut milk, 3 whole eggs, 1/4 cup coconut oil melted and cooled
Allow the batter to sit for half an hour.
Add a 1/4 cup of batter to the hot waffle iron.
Cook for approximately 3 - 5 minutes.
Remove and serve with whipped cream, fruit, jam or Norwegian brown (goat) cheese.
Makes approximately 10 waffles
