Ingredients

Gluten-Free Orange Banana Bread

  • 1 cup cassava flour
  • 1 1/4 cup " class="wprm-recipe-ingredient-link" target="_blank">almond flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp pink salt
  • 4 tbsp DIY Homemade Orange Marmalade or store bought See recipe on my blog
  • 1 1/2 cup mashed bananas approximately 3 bananas
  • 1/3 cup orange juice fresly squeezed is best
  • 1 tsp pure vanilla
  • 1 tsp orange zest from one orange
  • 1/4 cup oilive oil
  • 1/2 cup coconut sugar
  • *1/2 cup chopped nuts of choice optional

Streusel Topping If Preferred

Orange Glaze For Gluten-Free Orange Banana Bread

  • 1/2 cup powdered monk fruit sweetener
  • 1/2 tsp orange zest about half an orange
  • 2 tbsp orange juice fresh squeezed is best See nutritional information below for glaze

Instructions

  • First, preheat the oven to 350 F.
  • Second, line a loaf pan with parchment paper.
  • Third, combine the cassava flour, almond flour, baking powder, baking soda, salt, and cinnamon stirring until thoroughly combined.
    1 cup cassava flour, 1 1/4 cup almond flour, 2 tsp baking powder, 1 tsp baking soda, 1/2 tsp pink salt
  • Next, mash the bananas.
    1 1/2 cup mashed bananas approximately 3 bananas
  • Add the egg, orange juice, pure vanilla, orange zest, olive oil, egg, marmalade, coconut sugar to the mashed bananas.
    4 tbsp DIY Homemade Orange Marmalade or store bought, 1/3 cup orange juice fresly squeezed is best, 1 tsp pure vanilla, 1 tsp orange zest from one orange, 1/4 cup oilive oil, 1/2 cup coconut sugar
  • Stir the wet liquids into the dry.
  • Fold in the nuts if using.
    *1/2 cup chopped nuts of choice
  • Lastly pour into the prepared pan.
  • Can be topped with a strussel or orange glaze recipes follow.

Orange Streusel If Preffered

  • First, stir together the coconut oil, monk fruit sweetener, almond flour, and orange zest until it resembles coarse crumbs.
    2 tbsp melted coconut oil, 2 tbsp monk fruit sweetener, 1/4 cup almond flour, 1 tsp orange zest from one orange
  • Second, sprinkle over the batter and place in the oven.
  • Lastly, bake approximately 35- 40 minutes or until a toothpick comes out clean.
  • Cover loosely with tinfoil if the top gets too brown.

Orange Glaze If Preffered

  • First, allow the bread to cool for about 10 minutes before turning it out onto a cooling rack.
    1/2 cup powdered monk fruit sweetener, 1/2 tsp orange zest about half an orange, 2 tbsp orange juice fresh squeezed is best
  • Second, all the cake to cool completely.
  • Third, stir all the ingredients together to create a pouring glaze.
  • Last, and most imporantly pour the glaze over the cooled bread.
  • Decorate with orange slices and sprigs of mint if desired.
