Ingredients

Gluten-Free Orange Chamomile Scones

Orange Glaze

  • 1/2 cup monk fruit sweetener
  • 1/2 an whole orange zested and juiced

Instructions

Gluten-Free Orange Chamomile Scones

  • First, preheat oven to 425 F.
  • Second, heat the milk up in the microwave for 30 seconds.
    1/2 cup almond milk
  • Remove milk and add Chamomile loose-leaf tea and allow to steep.
    2 tbsp Chamomile loose-leaf tea
  • Next, combine cassava flour, almond flour, and baking powder.
    1 1/4 cup Cassava flour, 1 cup almond flour, 3 tsp baking powder
  • Finally, combine the Chamomile mixture, flaxseed meal, and boiling water and set aside.
    1 tbsp flax meal , 3 tbsp boiling water
  • Next, using a pastry knife cut in coconut oil into the flour mixture. 
    1/4 cup coconut oil
  • Additionally, stir in the marmalade into the Chamomile mixture.
    1/2 cup orange marmalade
  • Lastly, combine the wet mixture with the dry mixture.
  • Roll the dough together into a ball.
  • Place the dough onto an oiled baking stone.
  • Cut sconed into 10 pieces.
  • Place onto a baking stone into the oven and bake for 15-20 minutes.
  • Remove from the oven and allow to cool.

Orange Glaze

  • First, place the ingredients into a bowl.
    1/2 cup monk fruit sweetener, 1/2 an whole orange zested and juiced
  • Second, zest and juice half an orange.
  • Third, add the zest and juice to the monk fruit and stir until a thin glaze.
  • If too thick stir a tsp of water or orange blossom water.
  • Lastly, drizzle on cooled baked scones.
