First, combine the nut milk, orange juice and orange blossom water (if using).
Second, combine with your finger the orange zest and monk fruit until it looks orange.
Third, add in the cassava flour, almond flour, baking powder, and baking soda into the orange monk fruit sweetener.
Whisk the flour mixture together until thouroughly combined.
In a separate bowl, combine a beaten egg, olive oil, and vanilla,
Finally combine, the milk orange juice mixture with the beaten egg mixture.
Combine the wet and dry until just combined.
Add the coconut oil to a pan over medium heat.
Once, the pan is hot add in about 1/4 cup of batter and swirl into a circle.
Drop in about 3 pancakes.
Continue cooking until bubbles appear on the top and the edges look dry.
Flip the pancake and cook another minute or so until is lightly browned and cooked
Repeat with remaining batter until all the pancakes are made.
Place cooked pancakes onto a plate for serving.
Makes about 7-8 pancakes.
