Ingredients

  • 1/2 cup almond milk
  • 1/3 cup orange juice
  • * 2 tsp orange blossom water
  • 1 whole orange zested
  • 3 tbsp monkfruit sweetener
  • 3/4 cup cassava flour
  • 1/2 cup " class="wprm-recipe-ingredient-link" target="_blank">almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 whole egg
  • 2 tbsp olive oil or avocado oil
  • 1 tsp vanilla extract
  • 2 tbsp olive oil or coconut oil to cook pancakes in

Instructions

  • First, combine the nut milk, orange juice and orange blossom water (if using).
  • Second, combine with your finger the orange zest and monk fruit until it looks orange.
  • Third, add in the cassava flour, almond flour, baking powder, and baking soda into the orange monk fruit sweetener.
  • Whisk the flour mixture together until thouroughly combined.
  • In a separate bowl, combine a beaten egg, olive oil, and vanilla,
  • Finally combine, the milk orange juice mixture with the beaten egg mixture.
  • Combine the wet and dry until just combined.
  • Add the coconut oil to a pan over medium heat.
  • Once, the pan is hot add in about 1/4 cup of batter and swirl into a circle.
  • Drop in about 3 pancakes.
  • Continue cooking until bubbles appear on the top and the edges look dry.
  • Flip the pancake and cook another minute or so until is lightly browned and cooked
  • Repeat with remaining batter until all the pancakes are made.
  • Place cooked pancakes onto a plate for serving.
  • Makes about 7-8 pancakes.
