Ingredients

  • 3 oz cream cheese at room temperature
  • 4 oz butter
  • 1 + 4 cup + tbsp Cassava Flour
  • 1/4 tsp garlic powder
  • 1/4 tsp powdered onion
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tbsp fresh lemon juice
  • 30 pieces of Smokies
  • 1 tbsp Everything Bagel Seasoning

Egg Wash

  • 1 whole egg
  • 2 tsp water

Instructions

  • First and foremost, preheat the oven to 375 F.
  • Second, grease a rimmed cookie sheet.
  • Third,  in a large bowl with a stand mixer, blend the cream cheese.
    3 oz cream cheese , 4 oz butter
  • Fourth,  scrape down the sides and mix in the coconut oil until thoroughly blended.
  • In a separate bowl combine the cassava flour, garlic powder, onion powder, and baking soda stir until combined.
    1 + 4 cup + tbsp Cassava Flour, 1/4 tsp garlic powder, 1/4 tsp powdered onion, 1/2 tsp baking powder, 1/4 tsp baking soda
  • Next, add half of the flour mixture to the cream cheese mixture.
  • Scrape around the bowl and add in the lemon juice and remaining flour mixture.
    2 tbsp fresh lemon juice
  • It will be crumbly.
  • Finally, remove the dough and place it on a sheet of plastic wrap press the dough together into a ball.
  • Wrap in plastic wrap and allow to sit for thirty minutes.
  • Makes approximately about 30 pigs in a blanket a rectangle of 12 x 4 inches long.
  • Cut the edges off. Cut the dough into diagonal triangles.
  • Dry off the smokies place them into a triangle and wrap them up like a croissant.

  • Place onto the prepared cookie sheet. Lastly, place into the oven and bake for 18 -25 minutes.
  • Beat the egg with the water.
    1 whole egg, 2 tsp water
  • Using a pastry brush the pastry with the egg wash.
  • Dip in the Everything Bagel Seasoning, Sesame Seeds, or Fleur de sel.

  • Lastly, place into the oven and bake for 18 -25 minutes.

Variation

  • First, cut a slit into the smokies and add a small piece of cheese inside.
  • Finally, wrap the smokie into a piece of dough, roll it up, and place it onto a cookie sheet.
  • Lastly, bake at 375 F for approximately 18 - 25 minutes until lightly golden.
