First, preheat the oven to 350.
Second, blend the cottage cheese in a small food processor until smooth.
Third, place the parchment down on a baking sheet.
Fourth, combine the cassava flour, pink salt, and baking soda until blended.

Next, combine the cottage cheese, avocado oil, and flour mixture.
1 cup smooth cottage cheese, 3 tsp avocado oil
Using your hands, press the dough together.
In a stand mixer place the dough in the bowl with a dough hook and knead for 5 minutes.
Remove from the bowl and divide into 4 equal pieces.
Roll each piece into a rope approximately 14 inches long.
Lastly, form into a pretzel and place onto a baking sheet.
