Gluten-Free Soft Pretzels

Gluten-Free Soft Pretzels Recipe golden, crispy, and salty on the outside. Baked and made with cottage cheese and a baking soda water bath.

Ingredients

Gluten-Free Soft Pretzels

  • 1 cup smooth cottage cheese place in a blender or small food processor and blend until smooth
  • 3/4 cup cassava flour
  • 3 tsp avocado oil
  • 1/4 tsp pink salt
  • 1 1/2 tsp baking soda

Water Bath

  • 4 cups boiling water
  • 2 tbsp baking soda

Gluten-Free Soft Pretzels Egg Wash

  • 2 tsp water
  • 1 whole egg

Toppings

  • 2 tsp coarse salt
  • 2 tbsp grated parmesan cheese

Refined Sugar-Free Cinnamon Sugar

  • 1/4 tsp cinnamon
  • 2 tbsp monk fruit Sweetener

Instructions

  • First, preheat the oven to 350.
  • Second, blend the cottage cheese in a small food processor until smooth.
  • Third, place the parchment down on a baking sheet.
  • Fourth, combine the cassava flour, pink salt, and baking soda until blended.
    3/4 cup cassava flour, 1/4 tsp pink salt, 1 1/2 tsp baking soda
  • Next, combine the cottage cheese, avocado oil, and flour mixture.
    1 cup smooth cottage cheese, 3 tsp avocado oil
  • Using your hands, press the dough together.
  • In a stand mixer place the dough in the bowl with a dough hook and knead for 5 minutes.
  • Remove from the bowl and divide into 4 equal pieces.
  • Roll each piece into a rope approximately 14 inches long.
  • Lastly, form into a pretzel and place onto a baking sheet.

Baking Soda Water Bath

  • First, bring water to a boil.
    4 cups boiling water
  • Once boiling, carefully add in the baking soda.
    2 tbsp baking soda
  • Allow the water to calm down.
  • Next, using a spider, place one of the pretzels into the pan and boil for 30 seconds.
  • Pretzels will fall to the bottom and come to the top when ready.
  • Remove and allow the water to drip off.
  • Finally, place the pretzel onto the prepared baking sheet.
  • Lastly, continue until all the pretzels are done.

Egg Wash

  • First, beat the egg.
    1 whole egg
  • Second, add water to the egg.
    2 tsp water
  • Using a pastry brush, brush each pretzel with egg wash.
  • Lastly, top each pretzel with a topping of your choice.
    2 tsp coarse salt, 2 tbsp grated parmesan cheese

Refined Cinnamon Sugar

  • Combine the cinnamon and monk fruit sweetener and stir until combined.

Baking The Gluten-Free Soft Pretzels

  • Place into the preheated oven and bake for approximately 25 minutes.
  • Bake until the pretzels are dark brown.
  • Lastly, remove from the oven and allow to cool before eating.
