Ingredients

  • 1/2 cup diced fresh strawberries
  • 2 cups cassava flour
  • 1/3 cup monk fruit sweetener
  • 3 tsp baking powder
  • 1/4 tsp pink salt
  • 1 tsp fresh lemon zest
  • 4 tbsp coconut oil
  • 1/2 cup coconut milk

Instructions

  • First, preheat the oven to 350.
  • Second, and foremost place parchment down on a baking sheet.
  • Third, stir together cassava flour, monk fruit sweetener, baking powder, pink salt, and lemon zest.

  • Add in the strawberries and stir together.

  • Using a pastry knife cut in the coconut oil until the flour mixture resembles sand.
    4 tbsp coconut oil
  • Next, slowly stir in the coconut milk.

  • Pour the dough onto the counter and gently press it into a circle until it comes together.
  • Finally, cut the dough into 8 - 10 evenly-sized triangle pieces.
  • Place the scones onto the baking tray and place into the oven for 20-25 minutes or until lightly browned.
  • Test with a toothpick if it comes out clean they are ready if not cook another minute or two.
