First, preheat the oven to 350.
Second, and foremost place parchment down on a baking sheet.
Third, stir together cassava flour, monk fruit sweetener, baking powder, pink salt, and lemon zest.

Add in the strawberries and stir together.

Using a pastry knife cut in the coconut oil until the flour mixture resembles sand.
4 tbsp coconut oil
Next, slowly stir in the coconut milk.

Pour the dough onto the counter and gently press it into a circle until it comes together.
Finally, cut the dough into 8 - 10 evenly-sized triangle pieces.
Place the scones onto the baking tray and place into the oven for 20-25 minutes or until lightly browned.
Test with a toothpick if it comes out clean they are ready if not cook another minute or two.
