First, preheat the oven to 350. Second, and foremost place parchment down on a baking sheet. Third, stir together cassava flour, monk fruit sweetener, baking powder, pink salt, and lemon zest. Add in the strawberries and stir together. Using a pastry knife cut in the coconut oil until the flour mixture resembles sand. Next, slowly stir in the coconut milk.

Press the dough together. Pour the dough onto the counter and gently press it into a circle until it comes together. Finally, cut the dough into 8 – 10 evenly-sized triangle pieces. Place the scones onto the baking tray and place into the oven for 22-25 minutes or until lightly browned.
