First and foremost, in a large sauce over medium heat melt the butter.
4 tbsp butter or coconut oil
Second, sprinkle the tapioca flour all over the pan.
1/3 cup of tapioca flour or arrowroot flour
Third, continue stirring until a pasty consistency.
Fourth, if it seems a little greasy add more tapioca flour.
Drain the turkey drippings into a large measuring cup.
Allow pan drippings to sit and allow the grease to separate.
Pour off the fat from the dark brown drippings.
Mix the roux over medium heat for a minute or two.
Next, carefully, and slowly stir in the pan drippings and Turkey Bone Broth.
1 cup of roasted turkey drippings, 3 1/2 cups of Homemade Turkey Bone Broth or Chicken Broth or water
Bring the mixture to a boil while continuously stirring.
Reduce heat and simmer for approximately 9 - 10 minutes until thick.
Lastly, taste and season with salt and pepper.
Remove and add to a gravy boat.
