  • First, preheat the oven to 350 F.
  • Second, oil and flour two 6 -inch cake tins.
  • Third, combine cassava, flour, baking powder, and powdered monkfruit.
    1 cup cassava flour, 3/4 cup almond flour, 1 1/2 tsp baking powder, 2 tsp powdered vanilla monkfruit
  • Stir until combined.
  • Next. beat together eggs and monkfruit.
    2 whole eggs, 1 1/2 cup monkfruit sweetener
  • Combine milk and olive oil.
    1 cup almond milk, 1/2 cup olive oil
  • Finally, combine the egg mixture with the milk mixture until thoroughly combined.

  • Finally, blend in the flour mixture with the wet mixture.
  • Lastly, pour batter into prepared cake pans and cook for 35 - 40 minutes.
  • Allow cakes to cool before removing them from the tins.
