This moist crumb cake is perfect for 4th of July birthdays, Mother’s Day, Father’s Day, or even Easter. To decorate for the 4th of July just switch out the blackberries for blueberries. In all honesty, everything homemade is always way better. Vanilla is often considered the bland sibling of the ever so popular Chocolate Cake. Gluten-Free Vanilla Cake
Ingredients:
- 1 cup cassava flour
- 3/4 cup almond flour
- 1 1/2 tsp baking powder
- 2 tsp vanilla powdered monkfruit
- 2 eggs
- 1 1/2 cup monkfruit sweetener
- 1/2 cup olive oil
- 1 cup almond milk
Directions:
First, preheat the oven to 350 F. Second, oil and flour two 6-inch cake tins. Third, combine cassava, flour, baking powder, and powdered monkfruit. Stir until combined. Next. beat together eggs and monkfruit. Combine milk and olive oil. Next, combine the egg mixture with the milk mixture until thoroughly combined. Finally, blend in the flour mixture with the wet mixture. Lastly, pour batter into prepared cake pans and cook for 35 – 40 minutes. Allow cakes to cool before removing them from the tins.
