Ingredients

  • 2 pieces of cooked diced bacon
  • 1 lb ground turkey
  • 1 + 1/3 tbsp + tsp jalapeno roughly 3/4 to a whole jalapeno cored seeded and diced
  • 1 cup shredded cheddar or pepper jack cheese or 1/2 cheddar and 1/2 pepper jack
  • 2 tsp pink salt
  • 1 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp powdered jalapeno see recipe on my blog
  • 1/4 tsp smoked paprika
  • 1/8 tsp powdered mustard
  • 1/8* tsp chipotle *optional

Instructions

  • First, microwave the bacon until crispy about 2 - 4 minutes depending on the microwave.
    2 pieces of cooked diced bacon
  • Second, chop the bacon into bits.
  • Third, add the ground turkey to a bowl.

  • Evenly spread the remaining ingredients evenly onto the turkey.
    1 + 1/3 tbsp + tsp jalapeno, 1 cup shredded cheddar or pepper jack cheese, 2 tsp pink salt, 1 tsp black pepper, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp powdered jalapeno, 1/8 tsp powdered mustard, 1/8* tsp chipotle *optional, 1/4 tsp smoked paprika
  • Using your hands blend the mixture together until it is combined.
  • Next, make into sausage patties or links.
  • Finally, cook and serve or store in the freezer.

Making Patties or Links without Casings

  • Simply make a ball of sausage and then flatten as thinly as possible to help with even cooking. Hence, creating links without casings is easy.
  • Pinch of some sauage roll into a thin link and place in a small sheet of plastic wrap to help create the shape.
  • By placing a small wooden spoon on the plastic and pulling the plastic as you roll the meat back and forth.
  • Once you have achieved the link size and shape you want place in the fridge or freeze for 5 to 10 minutes to help the meat retain its shape.
  • Remove from the fridge or freezer
  • Remove the plastic before cooking.

Cooking Sausage or Patties

  • First, add a small amonut of oil to a frying pan.
  • Second, add the sausage patties or links.
  • Cook sausages patties about 6-9 minutes or so per side.
  • Cook links 4 - 8 minutes per side.
  • Once cooked remove from the pan and enjoy.
