First, heat the cumin, coriander, and fennel seeds in an iron skillet over medium heat until fragrant.

Second, add to a spice grinder and grind into a fine powder.
Third, add the ground turkey, seasonings, and remaining ingredients to a bowl.
1 lb ground turkey, *1 1/2 tsp Aleppo Pepper Powder, 1/2 tsp paprika, 1 tsp smoked paprika, 1 tsp pink salt, 1/2 tsp black pepper, 2 whole minced garlic cloves, 1 tsp granulated onion, *2 tsp sun dried tomato paste, 2-4 tsp Mild Harissa
Using your hands, combine the ingredients.
Take a small amount of meat and form it into a patty or sausage link.
Place a small amount of avocado oil into a pan over medium heat and fry until the patty is cooked.
Taste and adjust seasoning if necessary.
Make into patties or or links.
