Ingredients

  • 1 lb ground turkey
  • 1/4 tsp cumin seeds
  • 1/4 tsp coriander seeds
  • *1 1/2 tsp Aleppo Pepper Powder optional
  • 1/2 tsp paprika
  • 1 tsp smoked paprika
  • 1/4 tsp fennel seeds
  • 1 tsp pink salt
  • 1/2 tsp black pepper
  • 2 whole minced garlic cloves
  • 1 tsp granulated onion
  • *2 tsp sun dried tomato paste Optional
  • 2-4 tsp Mild Harissa For Spicier use more Harissa or Hot Harissa

Instructions

  • First, heat the cumin, coriander, and fennel seeds in an iron skillet over medium heat until fragrant.
    1/4 tsp cumin seeds, 1/4 tsp coriander seeds, 1/4 tsp fennel seeds
  • Second, add to a spice grinder and grind into a fine powder.
  • Third, add the ground turkey, seasonings, and remaining ingredients to a bowl.
    1 lb ground turkey, *1 1/2 tsp Aleppo Pepper Powder, 1/2 tsp paprika, 1 tsp smoked paprika, 1 tsp pink salt, 1/2 tsp black pepper, 2 whole minced garlic cloves, 1 tsp granulated onion, *2 tsp sun dried tomato paste, 2-4 tsp Mild Harissa
  • Using your hands, combine the ingredients.
  • Take a small amount of meat and form it into a patty or sausage link.
  • Place a small amount of avocado oil into a pan over medium heat and fry until the patty is cooked.
  • Taste and adjust seasoning if necessary.
  • Make into patties or or links.

How to Create Links

  • To create links pull out a small amount of plastic wrap.
  • Place about 1-2 tbsp on the plastic wrap roll it and press on the sauges into a cylinder.
  • Once the link is created place in the freezer for a few hours.
  • Remove and cook or store in the freezer as links. 
  • Refrigerate or freeze.

To Cook Sausage

  • Place patties into a pan over medium heat with a small amount of avocado oil.
  • Fry 3 -5 minutes before flipping.
  • Flip and continue cooking for another 3- 5 minutes or until cooked through.
