Ground Turkey Merguez Sausage

Ingredients

  • 1 lb. ground turkey
  • 1/4 tsp cumin seed
  • 1/4 tsp coriander seed
  • *1 1/2 tsp Aleppo pepper powder
  • 1/2  tsp paprika
  • 1 tsp smoked paprika
  • 1/4 tsp fennel seeds
  • 1 tsp pink salt
  • 1/2 tsp black pepper
  • 2 minced garlic cloves
  • 1 tsp granulated onion
  • *2 tsp sun-dried tomato paste
  • 2 tsp mild harissa (for spicier Sausage use more Harissa or Hot Harissa)

Directions

First, heat the cumin, coriander, and fennel seeds in an iron skillet over medium heat until fragrant. Second, add to a spice grinder and grind into a fine powder. Third, add the ground turkey, seasonings, and remaining ingredients to a bowl. Using your hands, combine the ingredients. Take a small amount of meat and form it into a patty or sausage link. Place a small amount of avocado oil into a pan over medium heat and fry until the patty is cooked. Taste and adjust seasoning if necessary. Make into patties or or links.

How to Create Links

To create links pull out a small amount of plastic wrap. Place about 1-2 tbsp on the plastic wrap roll it and press on the sauges into a cylinder. Once the link is created place in the freezer for a few hours. Remove and cook or store in the freezer as links.  Refrigerate or freeze.

To Cook

Place patties into a pan over medium heat with a small amount of avocado oil. Fry 3 -5 minutes before flipping.
