Homemade Strawberry Jello

Ingredients

  • 1 cup chopped fresh strawberries
  • 5 tbsp powdered monk fruit sweetener
  • 1 tbsp powdered vanilla monk fruit sweetener see the recipe on my blog
  • 1 1/2 cups up to ice cold water Not all is needed.
  • 3 tsp powdered Strawberries dehydrated
  • 1 tbsp gelatin of choice

Instructions

  • First and foremost, place powdered monk fruit sweetener, powdered vanilla monk fruit sweetener, and chopped strawberries together in a bowl.

  • Second, place the bowl into the fridge to marinate.
  • Third after 10 minutes remove, the strawberries from the fridge and spatula everything including the syrup into a large pan, not a pot.
  • Next, add 1 tbsp of dehydrated strawberry powder to the strawberries in the pan. 
    3 tsp powdered Strawberries
  • Bring the pan to a boil and cook for 3 -4 minutes.
  • Remove from heat.
  • Pour the strawberries into a sieve and press out all juices.
  • Pour it into a 2-cup measuring cup. It should be about 1/2 a cup.
  • Add water until it reads one cup. Pour back into the pan and bring to a boil for 2 minutes.
  • Pour back into the pan and bring to a boil for 2 minutes.
  • Remove from heat and pour back into the measuring cup.
  • Add in the gelatin and stir for 3 minutes until it is all dissolved.
    1 tbsp gelatin of choice
  • Finally, pour in one cup of ice water and stir until combined. 
    1 1/2 cups up to ice cold water
  • Pour into an 8 by 8 dish or into serving dishes.
  • Lastly, place into the fridge and allow to set for 4 hours.
  • Serve with whipped cream, strawberry wedges, and a sprig of mint.
