- 5 tbsp cup monk fruit sweetener
- 1 tbsp Powdered Vanilla Monk Fruit Sweetener
- 1 3/4 up to cups ice cold water
- 3 tsp dehydrated strawberry powder
- 1 tbsp unflavored gelatin
First and foremost, place two tablespoons of monk fruit and chopped strawberries together in a bowl. Place the bowl into the fridge to marinate. Remove, the strawberries from the fridge and spatula everything including the syrup into a large pan, not a pot. Next, add 1 tbsp of dehydrated strawberry powder to the strawberries in the pan. Bring the pan to a boil and cook for 3 -4 minutes. Remove from heat.
Pour the strawberries into a sieve and press out all juices. Pour it into a 2-cup measuring cup. It should be about 1/2 a cup. Add water until it reads one cup. Pour back into the pan and bring to a boil for 2 minutes. Remove from heat and pour back into the measuring cup. Add in the gelatin and stir for 3 minutes until it is all dissolved. Finally, pour in one cup of ice water and stir until combined. Pour into an 8 by 8 dish or into serving dishes. Lastly, place into the fridge and allow to set for 4 hours. Serve with whipped cream, strawberry wedges, and a sprig of mint.
