Ingredients

  • 2 lbs. skinless, boneless, chicken breasts
  • 3 tbsp Homemade Taco Seasoning See the recipe on my blog
  • 2 tbsp avocado oil
  • 1 tsp pink salt
  • 1 cup onions
  • 3/4 cup chopped bell peppers
  • 1 clove minced garlic
  • 1/2 cup Homemade Taco Sauce See the recipe on my blog
  • 1/2 cup shredded white cheddar
  • 1/4 cup Creamy Southwest Salad Dressing See the recipe on my blog
  • 1 head butterhead lettuce
  • 2 small cocktail cucumbers cut into matchsticks
  • 2 or 3 whole small radishes
  • 2 tbsp cilantro leaves

Instructions

  • First, cut up the chicken up into bite-sized pieces.
    2 lbs. skinless, boneless, chicken breasts
  • Second, place a deep frying pan on the stove over medium heat.
  • When the pan is hot add in the avocado oil, chicken, vegetables, minced garlic, taco seasoning, and salt stir until well combined.
    2 lbs. skinless, boneless, chicken breasts, 3 tbsp Homemade Taco Seasoning, 2 tbsp avocado oil, 1 tsp pink salt, 1 cup onions, 3/4 cup chopped bell peppers, 1 clove minced garlic
  • Once, the chicken is cooked stir in the homemade taco sauce and remove from the heat.
    1/2 cup Homemade Taco Sauce
  • While the chicken is cooking cut up the radishes and cut cucumbers into matchsticks
    2 small cocktail cucumbers cut into matchsticks
  • Finally, take the bibb lettuce and remove the lettuce leaves and wash them off under cool water.
    1 head butterhead lettuce
  • Blot the lettuce dry with paper towels.
  • Next, place 1 to 2 tablespoons of cooled cooked taco chicken meat and place on top of one lettuce leaf.
  • Add a little shredded cheese, slices of radishes, a couple of cucumber matchsticks, creamy Southwest Dressing, and top with a cilantro leaf.
