Chicken Taco Lettuce Wraps:
Consequently, we often eat lettuce-wrapped tacos in the summertime. Especially when it is so hot outside that you don’t feel quite like eating. In conclusion, meat can be made ahead of time. They are super easy and delicious. Black beans or pinto beans would also be a nice addition to the slightly spicy meat. In conclusion, they would also make a wonderful snack for a Super Bowl Party or Tailgating.
Nutritional Facts are based on one lettuce-wrapped taco. It makes approximately 20 lettuce tacos.
Chicken Taco Lettuce Wraps
Ingredients:
- 2 lbs chicken breasts
- 3 tablespoons Homemade Taco Seasoning
- 2 tablespoons avocado oil
- 1 teaspoon salt
- 1 cup chopped onion
- 3/4 cup chopped bell peppers
- 1 minced clove of garlic
- 1/2 cup Homemade Taco Sauce
- 1/2 cup shredded white cheddar
- 1/4 cup Creamy Southwest Salad Dressing
- 1 head of butterhead or bibb lettuce
- 2 small cucumbers cut into matchsticks
- 3-4 sliced radishes
- 2 tablespoons cilantro
- * wedges of lime (optional)
Directions:
First, cut the chicken up into bite-sized pieces. Second, place a deep frying pan on the stove over medium heat. When the pan is hot add in the avocado oil, chicken, vegetables, minced garlic, taco seasoning, and salt; stir until well combined. Once, the chicken is cooked stir in the homemade taco sauce and remove from the heat. While the chicken is cooking cut up the radishes and cucumbers into matchsticks.
Finally, take the bibb lettuce remove the lettuce leaves, and wash them off under cool water. Blot the lettuce dry with paper towels. Next, place 1 to 2 tablespoons of cooled cooked taco chicken meat and place on top of one lettuce leaf. Add a little shredded cheese, slices of radishes, a couple of cucumber matchsticks, creamy Southwest Dressing, and top with a cilantro leaf and a slice of lime. Make a whole platter of Chicken Taco Lettuce Wraps.

- 1 tsp pink salt
- 1 cup onions
- 3/4 cup chopped bell peppers
- 1 clove minced garlic
- 1/2 cup Homemade Taco Sauce See the recipe on my blog
- 1/2 cup shredded white cheddar

- 2 or 3 whole small radishes
- 2 tbsp cilantro leaves
Instructions
