Personal Notes:

Needless to say, if you have been following my blog then you know that I am on a journey to find better health and energy. Believe it or not, I have been progressing nicely since I started in Oct of 2017. It has made me rethink the way I eat and write recipes. For years I have been writing down my recipes to hand down to my children. Indeed, recipe writing has been a hobby of mine for years. In fact, I like the artistic ability to create something new and tasty. I feel honored that anyone follows my blog. Hence, I want to thank you all for that.

I am still in recovery from Covid Pneumonia and on oxygen 24/7. However, I am still working on my blog.

Chicken Taco Lettuce Wraps:

Consequently, we often eat lettuce-wrapped tacos in the summertime. Especially when it is so hot outside that you don’t feel quite like eating.  In conclusion, meat can be made ahead of time. They are super easy and delicious. Black beans or pinto beans would also be a nice addition to the slightly spicy meat. In conclusion, they would also make a wonderful snack for a Super Bowl Party or Tailgating.

Nutritional Facts are based on one lettuce-wrapped taco. It makes approximately 20 lettuce tacos.
